Hearty Vegetable Recipes
Carrot
Casserole
9 C. carrots, thickly sliced
6 oz. low-fat cheddar cheese, thinly sliced
2 1/2 c. milk
1/4 C. dry whole wheat bread crumbs
4 T. butter
1/4 c. flour
1/2 tsp. dry mustard
1 tsp. sea salt
1/4 tsp. celery seeds
1/8 tsp. pepper
In large saucepan, cook carrots for
7-10 min. or until tender. In another pan, melt the
butter and stir in flour, salt, seasonings. Add the
milk in slowly. Stir until thickened and bubbly.
Remove from heat.
Place 5 cups of carrots in a greased
baking dish. Layer half of cheese slices over
carrots. Cover with remaining carrots and place the
rest of the cheese slices over top. Pour sauce over
carrots. Top with bread crumbs. Bake in 350 oven for
20-25 min.
Veggie Stew
1 small tomato, coarsely chopped
1/2 yellow squash
1/2 zucchini
1/4 onion chopped
1/2 tsp. seasoned salt
1/2 tsp. garlic powder
1/8 C water
Slice zucchini & squash into 1/4 in.
slices. Place vegetables in I qt. bowl. Add garlic
powder & seasoned salt. Stir in 1/8 C. water. Mix.
Cover with plastic wrap & microwave on HIGH for 5
min.
Sweet Pepper
Soup
1 Tbsp. cold-pressed olive oil
3 med. sweet yellow peppers, cut in 1 in. pieces
1 med. sweet potato, peeled & quartered
2 small onions, diced
1 C. buttermilk
3 med. green peppers, cut in 1 in. pieces
6 C. chicken broth
1 clove garlic, minced
1 bay leaf
1/2 tsp. salt, optional
1/4 tsp. pepper
Sour cream & snipped chives, optional
Heat oil & butter in Dutch oven OR
soup kettle. Sauté peppers, onion, potato & garlic
until onion is tender, about 5 min. Add broth, bay
leaf, salt & pepper. Bring to a boil. Reduce heat.
Cover & simmer for 20 min. or until vegetables are
tender.
Discard bay leaf. Cool slightly.
Puree in batches in a blender. Return to pan. Stir
in buttermilk. Heat through. Serve hot or cold.
Garnish with sour cream & chives if desired. Yield
12 servings (3 quarts).
